The term 'baby vegetables' refers to both vegetables that are fully ripe and ready for harvesting, as well as smaller, immature vegetable plants that are picked before the fruits, leaves or vegetables are fully developed.

Baby vegetables can be harvested throughout the growing year, as crops mature, develop and grow. Leafy vegetables, root vegetables, oriental vegetables, potatoes and cucurbits are just some of the varieties that can harvested whilst small and 'immature', whilst other varieties - such as babycorn - have been specifically developed to be harvested as miniature versions of their fully grown counterparts.
Because baby vegetables are generally less hardy than full-size or fully mature vegetables, they are more vulnerable to the elements - particularly winds, frost and downpours. For this reason, if you're specifically aiming to grow and harvest baby vegetables, then you should aim for an environment or location that has a temperate, stable climate with adequate protection from wind and rain in particular. Growing baby vegetables under protection is ideal, but if you're planting into the ground, try to offer at least minimal protection early in the season from wildlife and wind with the likes of horticultural fleece tunnels an cloches.
