Description

Also called Dragonwort. No oneis sure whether this relates to its fiery tang or from its serpent-like roots but Tarragon is believed to cure bites from venomous creatures. However, nowadays it is primarily used for cooking!

A few leaves shredded into scrambled egg can raise this simple dish to a new level.

Leaves are rich in essential iodine, and vitamins A and C, as well as trace elements and beneficial mineral salts. In time gone by, chewing the root of Tarragon was claimed to cure toothache.

  • Hardy perennial.
  • Reaches approx 3 feet (90 cm) tall.
  • Has greeny-yellow flowers.
  • Survives cold and hot climates better than French Tarragon.
  • The flavour improves the older the plant is, (but it tends to be milder than French Tarragon).
  • Bitter-sweet, warm, peppery scent with an anise undertone.
  • Likes a sunny but sheltered position.
  • Prefers a rich, but light, dry soil but will tolerate poorer soils.
  • Sow in the spring under protection. Do NOT cover seed.
  • Germination usually takes approximately 14 days.
  • When seedlings large enough to handle plant 12-18" apart.
  • Culinary Uses.
  • Often used in fines herbes.
  • Good for herb butter.
  • Great for flavouring vinegar.
  • Used in hollandaise, tartare and béarnaise sauces.
  • Sometimes used as a rub for chicken prior to cooking.
  • Used by the Persians on grilled meats.
  • Medicinal Uses.
