Originating from India, the Bhut Jolokia is legendary with Chilli lovers all over the world and revered for its fiery heat. Up until recently it was hailed by the Guinness Book of Records as the hottest - and time will tell if the newer supposedly hotter varieties really are consistently hotter.

Even before they mature, the green flesh has a fiery heat; once matured to their customary red the fruits are literally blistering and even the tiniest amount of cut flesh touched on to human skin can cause agony.

But for those who can stand the heat, the true reward comes in the gorgeous smoked citrus flavour that comes from the almost oily flesh - in fact that oily flesh helps to make that heat persist in the mouth.

We use this to make a viciously hot Chilli sauce which lives up to its name 'Lava Flow'. We also use it in our Volcanic Chilli Jam (that goes so well with roast duck). And because we love this variety so much we also infuse these into Vodka that we then keep in the freezer - its not only in Iceland that you can experience ice and fire at the same time!

The pale green fruits have a crinkled appearance and mature to a rich red, measuring 2" - 3½" (5 - 8 cm) in length and 1" - 1½" (2.5 - 4 cm) in diameter (at the shoulder) tapering to a point. The plant has a fairly dense habit growing to approximately 2 - 3 feet (60 - 90 cm) and a similar spread.

Based on the fact Bhut Jolokia regularly scores at over 1,000,000 SHU's (Scoville Heat Units) and has been recorded as hot as 1,041,427 SHU's - making it 200 times hotter than a regular Jalapeno Chilli we once again caution those who purchase plants of this that it must treated with respect at all times and under no circumstances must the fruits be used in practical jokes etc. We accept no liability, consequential or otherwise, whatsoever to those who chose to grow, handle or eat this variety - or similarly to any third party who is injured as a result of contact in any way, shape or form.
