Description

An amazing plant that everyone should grow; it's so easy to do. Grow it in a container on your windowsill or in the open ground.

Iit's a great accompaniment for fish dishes as it adds a fantastic 'salty sea' taste to the meal.

It can sometimes be bought at your fishmonger, but by growing it yourself, you'll always have a good supply of samphire. You can even eat it raw (it's really tasty) and it's an unusual addition to a stir-fry. You can also pickle it.

Marsh samphire grows naturally on salt marshes and tidal flats in many parts of the United Kingdom. Its bright green stalks resemble asparagus spears, hence one of its alternative names – sea asparagus. It is also known as glasswort, as samphire ash was once used in glass-making.

  • Prefers a light sandy soil (or well drained) and a sunny position.
  • Likes a warm sheltered position and protection from the worst of our winters will ensure continuity from year to year.
  • Sow in spring or early summer.
  • Very lightly cover the seeds after sprinkling them onto the surface of a tray of compost. Germination may be slow.
  • Transplant to pots of free-draining soil when plants are 1" (2.5 cm) tall.
  • Will reach 2-3½" (6-8 cm) in height.
  • Best watered with a saline solution (1 teaspoon of proper sea salt in a pint of water).
  • Samphire will reseed itself so do not be too greedy later in the season, and let it flower, otherwise it will not reappear next year.
  • Has a salty taste (surprise surprise!).
