Description

Also known as Azuki, Aduki or Red Mung Bean. Has a crisp, sweet, nutty flavour which is great in stir fry or salads.

Widely grown in East Asia (which is where it is thought to originate from around 4000 BC), the Himalayas, China and Japan.

From sowing to cropping in approximately 3-5 days, no light required.

Good source of vitamins, fibre, protein, iron, magnesium, calcium, niacin, potassium, zinc, amino and folic acid. Adzukis are also said to support kidney, bladder and reproductive functions and are used in Traditional Chinese Medicines. The beans themselves can be boiled with sugar and mashed to make a paste which can be used as a filling.

To sprout your beans, cover them in water in a jam jar, about two - three times over and allow them to soak overnight draining off the water and recovering them with more cool water; this is recommended twice daily while you wait for your beans to sprout and keep the jar you have them in covered with a piece of cheesecloth (or similar) kept in place with an elastic band. Usually ready in 3-5 days and can be stored in the fridge if needed. The beans do not need light to germinate.
