Sweetcorn Fritters Recipe

(Makes 8)

Ingredients

• 2 oz (50g) plain flour
• 2 oz (50g) self raising flour
• A pinch of salt
• Black pepper, to taste
• 1 egg
• 5 fl oz (150ml) milk
• 2 tsp dark soy sauce
• 2 small spring onions, finely chopped
• 8 oz (225g) frozen, fresh or canned sweetcorn kernels (drain them well if frozen or canned)
• Oil for frying

Method

• Mix the flours and salt together in a bowl and stir in the black pepper.
• Beat the egg into the milk and stir in the soy sauce.
• Gradually beat the egg mixture into the flour. Stir in the spring onions and sweetcorn.
• Heat the oil in a flat frying pan and put a dollop of the batter into the pan, frying a few at a time. Cook on both sides for about two minutes each side or until golden brown.
• Keep fritters warm on a plate until ready to serve.
